On Wednesday, November 19, Restaurant Madame B invites you to an exceptional evening celebrating fine gastronomy and exquisite wines.
In collaboration with the prestigious Champagne house Joseph Perrier and the Californian winery Acaibo, this event promises a unique culinary journey, where each dish is paired with carefully selected wines designed to elevate every flavor.
Two Exceptional Wine Worlds
Joseph Perrier — 200 Years of History and Finesse
This year, Joseph Perrier, the oldest Champagne house still in operation, celebrates its 200th anniversary. Founded in 1825, the house has upheld for six generations a savoir-faire deeply rooted in its vines and the exceptional terroir of Champagne.
In the heart of the Champagne region, the Joseph Perrier vineyard flourishes on unique soils, where the quality of the grapes and respect for nature give rise to cuvées of remarkable finesse and elegance. Each glass reveals the perfect balance between freshness, aromatic complexity, and refinement — a signature style that pairs beautifully with haute cuisine.

Acaibo — Californian Boldness, Bordeaux Heritage
Acaibo is the wine project of Claire Villars and Gonzague Lurton, owners of the renowned Châteaux Dufort-Vivens, Ferrière, and Haut-Bages Libéral. In 2012, the couple embarked on a new adventure: to create a vineyard that reflects their identity, far from their Bordeaux roots.
They settled for three years in Chalk Hill, Sonoma County, California — a region ideally suited to Bordeaux varietals thanks to its sunny microclimate and rich soils. Their ten-hectare hillside vineyard, naturally moist and steep, is entirely planted with Cabernet Sauvignon, Cabernet Franc, and Merlot.
The name Acaibo, meaning “Three Fish” in a Native American dialect, pays tribute to their three children and their three classified growths. Since its first vintages, Acaibo has embodied a delicate balance between Californian terroir and Bordeaux craftsmanship, combining intensity, precision, and elegance.

A Wine Pairing Menu by Chef Grégory Vingadassalon
For this special evening, Chef Grégory Vingadassalon and his team have created a tasting menu harmoniously pairing the finesse of Champagne with the aromatic power of Acaibo wines.
Throughout the dinner, guests will enjoy refined and unexpected pairings:
- Yellow pollack, iodized emulsion, and pumpkin as an amuse-bouche
- Mushroom ravioli with chestnut, sage, and roasted hazelnuts as a starter
- Axuria veal sirloin, Jerusalem artichoke with brown butter, and Melanosporum truffle as the main course
- And to conclude, a delicate chocolate–pear dessert
Each dish has been designed to highlight the unique characteristics of the wines and Champagnes, offering a harmonious dialogue between gourmet cuisine and wines of character.
