Spring flavors are in the spotlight at Madame B restaurant! Chef Gregory Vingadassalon and his team unveil a new menu full of freshness, perfect for celebrating the season.
At Madame B, seasonality is a top priority. Artichokes, cauliflower, asparagus, or turnips : find these seasonal delights in the restaurant’s latest menu.
Spring takes over Madame B’s menu
This month, on the starter side, discover a cauliflower dish served with peanuts and smoked duck breast, a perfect blend of crunch and indulgence! Also on offer: grilled white asparagus cooked on the barbecue, a true seasonal must-have, enhanced by a Tio Pepe sauce. This dry Spanish white wine, similar to sherry, brings an aromatic freshness that pairs beautifully with the sweetness of the asparagus.
As for mains, indulge in a Herriko beef brisket, a delicious local meat from cattle raised in the Pays Basque, served with a tender potato and piquillo pepper condiment.
You can also opt for an Ibaïama pork loin, paired with creamy polenta and a flavorful meat juice. And for a vegetarian alternative, Chef Gregory Vingadassalon and his team propose a spelt pilaf with turnips and artichokes, perfect choices to celebrate the vibrant flavors of spring!
Finally, end your meal on a sweet note with our milk semolina dessert, elevated with orange, prunes, and orange blossom, or fall for the baked apple topped with hazelnuts and irresistible beer caramel.
