On Wednesday, February 4, the collective Les Saisons des Châteaux and the restaurant Madame B invite wine and gastronomy enthusiasts to an exceptional evening in the heart of Bordeaux. A sensory immersion dedicated to the Médoc terroir, designed as a moment of sharing around great wines and bold cuisine.
Les Saisons des Châteaux
Les Saisons des Châteaux is a collective of Médoc wine estates united by a single ambition: to showcase their wines in a new light. Through temporary events, the collective creates experiences where wine tells its story in dialogue with gastronomy, locations, and the seasons.
Far from traditional tastings, Les Saisons des Châteaux offers a lively and sensitive approach to wine, rooted in the Médoc terroir and open to new audiences. After several summer editions held in iconic settings, the collective is now taking a new step by offering events throughout the year, allowing the Médoc to shine across all seasons.
A New Season for Les Saisons des Châteaux
For its very first winter edition, Les Saisons des Châteaux presents a more exclusive and gastronomic way to discover the wines of the Médoc. Together with Chef Grégory Vingadassalon, each wine is enhanced by a culinary creation designed to reveal its full character and personality.
For this occasion, 11 Médoc châteaux come together at Hôtel Burdigala and the restaurant Madame B. Eleven wines, eleven stories, eleven aromatic signatures: Angludet, Camensac, Castera, Du Tertre, Ferrière, Fourcas Hosten, Kirwan, Grand-Puy Ducasse, Haut-Bages Libéral, Prieuré-Lichine, and Saint-Ahon. A true invitation to explore the richness and diversity of the Médoc terroirs through an immersive tasting journey.
Chef’s Pairings
Throughout the evening, the wines engage in a dialogue with a succession of culinary creations imagined by Chef Gregory Vingadassalon. From the Château Prieuré-Lichine 2024 Bordeaux Blanc, paired with smoked scamorza, Sturia caviar, and grapefruit, to the Château Angludet 2021 Margaux, served with celery cream, vanilla, and buckwheat, each dish has been carefully crafted as a subtle echo of the wine it accompanies.
Guests will also discover seared scallops, roasted quail, pan-seared foie gras, braised beef cheek, and pigeon in a sesame crust, before concluding the evening on delicately spiced and indulgent notes.

The evening will take place on Wednesday, February 4, from 7:00 PM at the bar of Hôtel Burdigala, with welcome and reception at the restaurant Madame B, 115 rue Georges Bonnac, 33000 Bordeaux.
