02.05.25

On Wednesday 21 May, the Madame B restaurant in Bordeaux will be hosting a unique 4-hands dinner based on creativity, seasonality and sharing. For this exceptional evening, Grégory Vingadassalon, chef at Madame B, has invited Kevin Maura, chef trainer at the École Ducasse Paris Studio, to take over his kitchen for a unique 6-course menu.
Kevin Maura, a chef with local roots and an inspiring career path
Born in La Teste-de-Buch, on the Bay of Arcachon, Kevin Maura developed a taste for good produce as a child, accompanying his market gardener father to the markets. He trained at the Arcachon hotel school, before honing his skills with renowned chefs such as Nicolas Magie, Jean-Luc Rocha (Château Cordeillan-Bages) and Olivier Nicolau (Arraditz restaurant in Pau).
Having worked in Parisian establishments such as the Saint James and 110 Taillevent, Kevin chose a more personal and human path by joining the École Ducasse Paris Studio, where he now shares his passion with amateurs and at culinary events.
A six-course menu based on seasonal produce
For this gastronomic dinner in Bordeaux, Kevin Maura and Grégory Vingadassalon have devised a menu, showcasing the richness of seasonal produce and daring combinations: flambéed trout, roasted sweetbreads with seaweed butter, white asparagus, rhubarb and herb sorbet, among other surprises...
